Ways with rhubarb


I am partial to a good old crumble but while rhubarb is in season, I can’t help but make a few (many) of these refreshing cocktails!

To form the base of the drinks, first you’ll need to make a batch of rhubarb syrup

Ingredients – makes 500ml(ish)
4 cups fresh rhubarb, chopped
1 cup golden caster sugar
1 cup cold water

In a saucepan, bring the rhubarb, sugar and water to the boil. Gently simmer for 10-15 minutes until the sugar has dissolved, the rhubarb is soft, and the mixture has thickened. Strain the mixture through a fine sieve to collect the juice. Keep the remaining ‘mush’ – it’s delicious mixed with natural yoghurt.

Rhubarb and gin fizz


Ingredients – makes one
50ml rhubarb syrup
1 shot (35ml) gin
150ml sparkling water
Juice of 1/4 lime
Lime wedge, to garnish

Mix the syrup, gin and lime juice and pour over ice into a short glass. Top with sparkling water and a wedge of lime.

Rhubarb sunset


Ingredients – makes two
50ml rhubarb syrup
200ml sparkling wine

Pour the syrup into two fluted glasses and top with sparkling wine – cava for a drier tipple and prosecco if you prefer something a bit fruitier. Enjoy!
